How to make Carob Cupcakes
Ingredients for Cupcakes
- ¾ cup rolled oat flour, floured
- 1 tsp baking powder
- 3 tbsp carob powder
- 1 tablespoon molasses
- 1 tbsp vanilla
- ½ cup applesauce, unsweetened
- ¼ cup low fat Greek yogurt
- 1 egg
Supplies Needed:
- Food Processor or Blender
- Silicone Cupcake mold
- Cupcake liners
- Cookie sheet
- Piping bag and tips
Mashed Potato Frosting for Dogs
Ingredients for Mashed Potato Frosting
- 2 large russet potatoes, peeled and cubed
- 1 cup plain yogurt
- Milk to thin the mixture out if needed.
Directions for Carob Cupcakes
Preheat your oven to 350° degrees Fahrenheit.
First, you’ll need to turn your oat flour into a flour-like consistency. To do this, use either a food processor or a blender. Simply place your oats into your blender and pulverize until a fine, flour-like consistency is achieved.
Place your flour into a larger bowl. Mix in baking powder and carob powder. So that all the dry ingredients are mixed together.
In a separate bowl, mix your molasses, vanilla, applesauce, yogurt and 1 egg, stir until well mixed. Once stirred, add to your dry ingredients.
Mix the dry ingredients and wet ingredients until well stirred.
If not using cupcake liners, grease your cupcake mold really well and place onto a cookie sheet for stability.
Using a tablespoon or a ⅓ measuring cup, drop the batter by the spoonfuls into the molds.
Bake for 12 minutes. Check on them for doneness and bake for a couple more minutes if needed.
Allow to cool before frosting.
Directions for Mashed Potato Frosting
Cut your potatoes into larger size chunks. Place into a 3-quart saucepan, cover with water and boil until done. Your potatoes will be fork-tender.
Drain the water out of the saucepan.
Add yogurt and beat with an electric mixer, slowly adding milk, as needed.
You want your mashed potato frosting to be creamy and smooth, like frosting.
Place your frosting into a piping bag and pipe onto your cupcakes. Hint: if you don’t have a piping bag you can use a Ziploc bag.
